Located in the Chirinos district of San Ignacio, this farm is operated by the Tocto brothers (Eber, Linden, and Tocto Bermeo). They have transformed their family farm into a world-class model for Regenerative Organic agriculture. While many organic coffees are "organic by default" (meaning the farmer just can't afford chemicals), Churupampa is "organic by design"—they use sophisticated microbiology and forest-floor composting to create some of the cleanest coffee in South America.
The Flavor Profile (Medium Roast)
A medium roast on these beans perfectly balances Peru's signature "mellow" profile with the sophisticated, bright fruit notes that the Tocto brothers' meticulous processing brings out.

The "Tocto" Difference: The family is famous for their "Quality Control" lab. They cup every batch and separate them by quality, which is rare for a farm of this size. This results in a cup that is remarkably consistent from the first sip to the last.
Washed Process Clarity: They use a traditional washed process with very clean mountain water. This strips away any "earthiness" often found in cheaper Peruvian coffees, leaving only the sweet, transparent flavors of the bean.
Regenerative Organic Certified (ROC): This is one of the first farms to achieve this. It means the coffee isn't just "not using chemicals"—it's actively improving the soil health and capturing carbon.

All of our coffees are packaged in bags fitted with a one-way valve. The bags allow the carbon dioxide produced by roasted coffee to escape, while not allowing air to enter the bag. This packaging helps preserve freshness and flavor.
