This coffee from the Jinotega region—often called the "City of Mists"—is a quintessential high-altitude Nicaragua. The UCCEI (Unión de Cooperativas Agropecuarias de Servicios de Café) is a powerhouse of smallholder farmers dedicated to organic practices and rigorous quality control.
Because it is grown in the shaded, misty mountains of Northern Nicaragua, the cherries ripen slowly, packing the beans with dense sugars and a refined, "bright" acidity that sets it apart from the heavier South American profiles.
SHG (Strictly High Grown): This is the highest altitude grade in Nicaragua (grown above 1,350 meters). These beans are denser and can withstand a higher-intensity roast while maintaining their flavor integrity.
EP (European Preparation): Like your other coffees, this signifies a meticulous hand-sorting process to ensure only the most uniform, defect-free beans make it into your bag.
