The Mountain Water Process is a non-chemical decaffeination method that uses the clear meltwater from Pico de Orizaba (Mexico’s highest mountain). Unlike the "European Process" which uses methylene chloride, MWP relies on osmosis. The green beans are soaked in water to extract caffeine and flavor solids; the caffeine is then filtered out, and the flavor-saturated water is reunited with the beans. This preserves the original cellular structure and flavor of the Mexican bean.
HG (High Grown): Coffee grown at altitudes above 1,200 meters. High altitude leads to a denser bean, which translates to a more complex and "sparkling" flavor profile even after decaffeination.
EP (European Preparation): Indicates the beans were meticulously hand-sorted to remove any imperfections, ensuring a clean, consistent roast.
Organic: Certified grown without synthetic pesticides or fertilizers, which is particularly important in a water-processed decaf to ensure a "pure" flavor.
The Flavor Profile (Medium Roast)
